FROSTED BUNDT CAKE
MAKES 8 SERVINGS.
2/3 cup water
1 tsp baking powder
4 eggs, beaten
2 pound pkg powdered sugar
1 cup butter
1/2 tsp salt
2 1/2 cups flour
2/3 cup low fat milk
1 tbs vanilla
6 oz pkg low fat cream cheese
Heat oven to 350 degrees. Grease and flour a bundt pan. FROSTING---In a bowl, beat cream cheese, butter and vanilla, mix well. Add sugar alternately with milk, mix well. Remove 2 1/2 cups of mix, place into a plastic bag, set aside. CAKE---Add eggs to remaining frosting, beat until blended. In separate bowl, combine flour, baking powder and salt. Add flour mixture to frosting, mix alternately with water, mix well. Pour into pan, bake 75 min. or until done. Cool 30 min. While cake is still warm, use a knife to loosen cake edges from pan. Cool completely before removing from pan. Top with frosting, then SERVE...
