SIMPLE POTATO DILL SOUP
MAKES 4 SERVINGS.
1 tbs lemon juice
8 cups low sodium chicken broth
6 sprigs dill
Salt and Pepper
2 stalks celery, sliced, plus celery leaves
2 tbs olive oil
1 cup frozen peas, thawed
1 1/2 pounds potatoes, cut into pieces
4 cloves garlic, finely chopped
1 fennel bulb, cored, cut into pieces
2 leeks, cut into pieces
Heat oil in a pot. Add leeks, celery stalks and fennel, season with 1/2 tsp each salt and pepper, cook 4 min. Stir in garlic, cook 2 min. Tie dill sprigs together with twine. Add it to pot along with potatoes and broth, bring to a boil. Reduce heat, simmer until potatoes are tender. Add peas and celery leaves, cook until heated through. Discard dill sprigs. Stir in lemon juice and additional dill, if desired, then SERVE...
