SIMPLE SUNCHOKE SLAW---Sunchoke slaw with carrot, fennel and raisins.
MAKES 4 SERVINGS.
1/2 pound sunchokes
1 carrot
1 bulb fennel plus 1/4 cup fronds, coarsely chopped
2 tbs orange juice
2 tsp lemon juice
1/3 cup mayonnaise
1/3 cup raisins
Using food processor, shred sunchokes with skin on. Transfer to bowl, toss with lemon juice. Shred carrot and fennel bulb, add to sunchokes. In bowl, stir together mayonnaise and orange juice, toss with sunchoke mixture, raisins and fennel fronds. Season to taste, then SERVE...
