EASY BAKED RICE---Baked creamy risotto rice with peas and cheese.
MAKES 8 SERVINGS.
1 3/4 cups Arborio rice
1 cup frozen peas, thawed
1/2 cup grated Romano or Parmesan cheese
4 1/2 cups chicken broth
1 onion, minced
1/2 cup white wine or broth
2 tbs butter
Heat oven to 350 degrees. In pot, cook onions in 1 tbs butter 4 min. Add rice and wine. Cook 2 min. Add broth, cover. Bake 30 min. or until liquid is absorbed. Stir in cheese, peas and 1 tbs butter, then SERVE...
