ITALIAN PIZZA MEATLOAF
MAKES 2 LOAVES.
3 pounds ground beef
2 1/2 tsp dried basil
3/4 cup bread crumbs
1 onion, finely chopped
2/3 cup pizza sauce
3 eggs, beaten
1 1/4 tsp salt
1 1/2 tsp pepper
2 1/2 tsp dried oregano
2 cans 2.25 oz each sliced olives, drained
2 tbs Worcestershire sauce
2/3 cup milk
Combine eggs, milk, pizza sauce, Worcestershire, onion, olives, bread crumbs, oregano, basil, salt and pepper in a bowl. Crumble beef over mixture, mix well. Pat into two greased loaf pans. Cover, freeze one meatloaf for up to 3 months. Bake remaining meatloaf uncovered at 350 degrees for 55 min. or until done. Top with pizza sauce and cheese. Let stand 10 min. before slicing, then SERVE...TO USE FROZEN MEATLOAF---Bake frozen meatloaf as directed above, increasing time to 1 1/2 hours. Top with pizza sauce and cheese.
