[SimplifyMe] Baked {Eggs} with Veggies

 

BAKED EGGS WITH VEGGIES
Makes 6 servings.

3/4 cup shredded Gruyere cheese
6 eggs
6 cups spinach
1/2 pound mushrooms, sliced
2 tbs olive oil
1/2 cup milk
6 slices potato bread, toasted
Salt and Black pepper
1 onion, chopped

HEAT oil in a skillet. Add onion, cook until golden. Add mushrooms, cook undisturbed, until they begin to brown. Add 1/2 tsp salt and pepper, continue cooking until soft. Stir in spinach, cook until wilted. Remove from heat, let cool. Brush a baking dish with oil. Arrange bread in dish in a single layer with edges slightly overlapping, then spoon mushroom spinach mixture on top. Heat oven to 350 degrees. Crack an egg onto each piece of bread, season with salt and pepper. Pour milk over top, sprinkle with cheese. Bake until egg whites are set, then SERVE...
