| THAI CHICKEN DRUMSTICKS Makes 4 servings. 2 cucumbers, peeled, halved lengthwise, thinly sliced crosswise 8 chicken drumsticks 1 lime, juiced 3 cloves garlic 1 1/2 cups jasmine or brown rice Salt and Pepper 2 tbs oyster sauce 1/2 bunch cilantro or parsley, stems and leaves separated, coarsely chopped In a food processor or blender, puree cilantro stems, garlic, oyster sauce, half of the lime juice and 1/2 tsp each salt and pepper. Transfer to a bowl, add chicken and toss to coat. Cover and refrigerate 3 hours. Heat oven to 400°. Place chicken on a parchment lined baking sheet and bake until cooked through, 50 min. -In a saucepan, combine rice, 2 1/4 cups water and 1/2 tsp salt over heat. Cover and cook until rice is tender. Let sit covered 10 min. fluff. In a bowl, combine cucumbers, cilantro leaves and remaining lime juice, season with salt and pepper. SERVE with chicken and rice... |
