[SimplifyMe] Summer Squash (Dip)---w/ Chips

 

SUMMER SQUASH AMOLE                     Makes 5 cups.

Grilled squash dip served with chips. Delicious!

6 unpeeled cloves garlic
1/4 cup olive or vegetable oil
1 pound yellow summer squash, sliced lengthwise
1 pound zucchini, sliced lengthwise
1 onion, thickly sliced
Salt and Pepper
1 cup grated Parmesan cheese
1 cup toasted walnuts
2 tbs thyme leaves
Tortilla chips

Wrap garlic with 1 tbs oil in foil and grill until tender, 20 min. squeeze cloves from skins. Brush squash, zucchini and onion with remaining oil, season with salt and pepper. Grill until charred, 10 min. Using a food processor or blender, puree veggies with cheese, nuts, thyme and garlic. SERVE with chips...
