| PATTY MELTS WITH EGGS Makes 4 servings. Patty melts are my favorite type of sandwiches and this version is very yummy. Enjoy! 16 slices monterey jack or mild cheddar cheese 4 large eggs 2 tbs worcestershire sauce Salt and Pepper 1 1/2 tbs butter or margarine 1 large poblano chile pepper 8 slices white bread Olive or vegetable oil 1 1/2 pounds ground beef 1 onion, finely chopped 8 slices bacon Char poblano all over under a hot broiler. Place in a bowl, cover and let cool. Discard seeds and thinly slice. Heat oven to 375°. Arrange bacon on a broiler pan and bake until crisp, 17 min. Heat 1 1/2 tbs butter in a skillet. Add onion and cook until lightly browned. Season with salt and pepper. Transfer to a bowl. Return pan to heat. -Season beef with worcestershire, salt and pepper. Form 4 very thin patties to fit the shape of your bread. Add a drizzle of oil to hot skillet, then add patties and cook through, turning once. Wipe out pan and return to heat. Add another drizzle of oil, then eggs, cook to desired doneness. Transfer to a plate. -Butter bread on one side. Place 4 bread slices buttered side down and top each with a few slices of poblano, 2 cheese slices, a beef patty, some bacon, an egg, 2 more cheese slices, some onions and remaining bread slice buttered side up. Grill sandwiches turning once until deep golden, then SERVE... |
