| SPICY CHICKEN WITH SPINACH ORZO Makes 4 servings. 1 lemon, zested, juiced 1 pound skinless boneless chicken breast, cut into 1/2" thick strips 3 cloves garlic, chopped Salt and Pepper 3 oz spinach, rinsed 3 tomatoes, seeded, chopped 1/2 jalapeno chile, seeded, finely chopped 1 onion, halved lengthwise, thinly sliced 2 tbs olive or vegetable oil 1 1/2 cups orzo pasta In a pot of boiling salted water, cook orzo until al dente. Place spinach in a colander and drain orzo over spinach, return both to pot. Stir in 1 tbs oil, season with salt and pepper. Cover to keep warm. In a skillet, heat remaining oil. Add onion and cook until softened. Stir in garlic and jalapeno and cook 30 seconds. Push onion mixture to the side of skillet. Add chicken, season with salt and pepper and cook undisturbed 2 min. Stir in 1/4 cup water, tomatoes, zest and lemon juice and cook until chicken is cooked through. SERVE chicken mixture on a bed of spinach orzo... |
