| EASY BEEF STROGANOFF Makes 4 servings. Chopped parsley 1 tbs Dijon mustard 1/2 cup low sodium chicken broth 1 pound button mushrooms, sliced 1 onion, thinly sliced 1 pound sirloin steak, thinly sliced 6 oz egg noodles 1/2 tsp Worcestershire sauce 1/2 cup low fat sour cream 1/2 cup dry white wine, optional 1 green bell pepper, thinly sliced Salt and Pepper 3 tbs olive or vegetable oil Cook noodles according to package directions. Heat 1 tbs oil in a skillet. Season steak with 1/4 tsp each salt and pepper and cook until browned, transfer to a plate. Reduce heat. Add onion, bell pepper and 1 tbs remaining oil and cook 5 min. Add mushrooms, remaining oil and 1/4 tsp each salt and pepper. Increase heat and cook tossing until vegetables are tender. Add wine, if using, and simmer 1 min. Add broth, simmer until slightly reduced. Remove from heat, stir in sour cream, mustard and Worcestershire. Spoon over noodles, sprinkle with parsley, if using, then SERVE... |
