| LITTLE LAMB APRICOT COOKIES Makes 16 servings. These cookies look like little lambs and are so cute and very yummy too, I made these cookies and they are very easy to do. 8.5 oz can apricots in syrup, drained, sliced 1/4 cup sugar 3 tbs butter, melted 2 tbs light brown sugar 1 egg white, beaten 17.5 oz bag sugar cookie mix 3/4 tsp cinnamon 1/2 cup + 2 tbs flour Heat oven to 375°. In bowl, combine 1/2 cup flour, brown sugar, 1/4 tsp cinnamon and butter until crumbs form. Prepare cookie mix according to directions for cutouts, add remaining flour. On floured surface, roll out dough to 1/4" thickness. Using lamb shaped cutter, cut out cookies, using scraps to cut out ears and tails. -Place cookies on ungreased baking sheet, pressing on ears and tails. In bowl, combine sugar and remaining cinnamon. Brush cookies with egg white. Place small crumb in head for eye. Arrange apricots on bodies. Cover with crumbs, sprinkle with cinnamon sugar. Bake 9 min. or until golden brown.
