| TURKEY, CARROT & MUSHROOM MEAT LOAF Makes 6 servings. 1 1/2 pounds ground turkey 4 green onions, thinly sliced 2 slices whole wheat sandwich bread, torn into small pieces 2 tbs Dijon mustard 1 medium carrot, grated 8 oz mushrooms, thinly sliced Salt and Pepper 1 tbs thyme leaves 2 large eggs Heat oven to 375°. Line a rimmed baking sheet with foil. In a bowl, whisk together eggs, mustard, thyme, 3/4 tsp salt and 1/2 tsp pepper, stir in the bread. Add mushrooms, green onions, and carrot and mix to combine. -Add turkey and mix until incorporated. Transfer the mixture to the baking sheet and shape into a 9x3 1/2" loaf. Bake 45 min.
