[SimplifyMe] (Lentil) Vegetable Loaf---w/ Pepper

 

LENTIL, ROASTED PEPPER & SPINACH VEGETABLE LOAF         Makes 6 servings.

6 oz pkg falafel mix
1 jarred roasted red pepper, cut into pieces
1 small onion, finely chopped
2 tbs olive oil
2 oz feta cheese, crumbled
2 cups baby spinach, chopped
15 oz can lentils, rinsed
2 large eggs

Heat oven to 375°. Line a rimmed baking sheet with foil. In a bowl, whisk together eggs, oil, and 2 tbs water. Add lentils, onion, spinach, and roasted pepper and mix to combine, fold in cheese.
-Add falafel mix and stir to combine. Transfer the mixture to the baking sheet and shape into a 9x3 1/2" loaf. Bake 35 min. Let rest 5 min. before slicing, then SERVE...
