[SimplifyMe] Grilled Jumbo (Shrimp)---w/ Salad

 

GRILLED SHRIMP WITH TOMATO SALAD                    Makes 4 servings.

VINAIGRETTE:
1 tbs honey
2 garlic cloves, pressed
1/4 cup olive or vegetable oil
3 tbs orange juice
2 tsp chopped cilantro or parsley
1 tbs whole grain mustard
1 tbs lemon juice
1/2 cup white or red wine vinegar
SHRIMP:
White or Black pepper
1/4 tsp red pepper flakes
2 tbs olive or vegetable oil
12 jumbo shrimp, peeled and deveined, tails intact
2 garlic cloves, finely minced
TOMATO SALAD:
12 red grape tomatoes, cut into halves
2 beefsteak tomatoes
4 Roma tomatoes
2 yellow pear tomatoes, cut into halves
Freshly ground black pepper
4 tbs basil, cut into thin ribbons

PREPARE VINAIGRETTE---Combine all ingredients in a bowl. Whisk well.
-PREPARE SHRIMP---Combine oil, garlic, pepper flakes and shrimp in a bowl. Let stand 15 min. Add white pepper. Heat grill. Thread marinated shrimp on skewers, place on grill. Cook 3 min. or until pink.
-PREPARE SALAD---Toss grape and pear tomatoes with vinaigrette. Sprinkle with pepper. Slice beefsteak tomatoes and Roma tomatoes into 1/8" thick slices and place on serving plates. Spoon grape and pear tomatoes and vinaigrette on top and garnish with basil. SERVE with shrimp...
