SPICY VEGGIE SLIDERS
MAKES 8 SLIDERS OR 4 SERVINGS. HALF RECIPE FOR 2.
15 oz can black beans
1 cup plus 2 tbs breadcrumbs
1/2 cup cooked rice
1/3 cup chopped onion
1/3 cup chopped bell pepper
1 chipotle pepper in adobo, chopped
1 tsp adobo sauce
1 clove garlic, minced
1/2 tsp cumin
1 egg white, beaten
1/4 cup oil
1/2 cup salsa
8 slider buns, split, toasted
Onion rings
In processor or blender, pulse beans, 2 tbs breadcrumbs, and next 7 ingredients to blend. Form into 8 balls. Coat veggie balls in egg white, then remaining breadcrumbs. In skillet, heat oil. Cook balls until browned. Build sliders with buns, balls, salsa, and onion. SERVE & ENJOY...
