[SimplifyMe] Pepper Sauce {Fish}

 

PEPPER SAUCE FISH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

FISH---
4 fish steaks
2 tbs oil
2 lemons, halved
PEPPERS---
2 bell peppers
1/4 cup oil
2 onions, sliced
1 mild green pepper, seeded, sliced into strips
1 jalapeno pepper, seeded, sliced
4 cloves garlic, sliced
2 sprigs oregano
2 tbs tomato paste
1 tbs sugar
1 cup chicken stock
2 tbs red wine vinegar

Heat a grill. Season fish, coat in oil. Season lemons, drizzle with oil. FOR PEPPERS---Roast bell peppers under broiler until blackened. Transfer peppers to a bowl, cover, let steam 15 min. Rub skin off peppers, then split, seed, and remove stems. Slice into strips. *IN a skillet, heat oil. Add onions, peppers, garlic, and oregano, season, cook until vegetables soften. Add tomato paste, stir 1 min. Stir in sugar. Add stock, vinegar, and bell peppers, simmer 10 min. *GRILL fish and lemons until fish is opaque and lemons are charred. Douse each fish steak with juice of half a lemon, top with pepper sauce. SERVE & ENJOY...
