LEMON SHRIMP PASTA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/3 cup oil
1/4 cup chopped parsley
2 tbs lemon juice
2 cloves garlic, chopped
1 tsp lemon zest
1/4 tsp crushed red pepper
1 pound shrimp, peeled, deveined
8 oz cooked linguine pasta
6 oz pkg spinach
1 cup crumbled feta cheese
In pot, heat first 6 ingredients, season. Add shrimp, cook until opaque. Toss with remaining ingredients until spinach wilts, season. SERVE & ENJOY...
