CHICKEN VEGGIE SALAD
MAKES 4 SERVINGS.
2 lemons
1 cup parsley, chopped
8 tbs olive oil
3 tbs chopped thyme
4 cloves garlic, chopped
1 tsp crushed red pepper
6 boneless skinless chicken thighs
6 cups kale, chopped
15 oz can garbanzo beans
1 cup crumbled feta cheese
2 red bell peppers, chopped
1 onion, chopped
3 ribs celery, chopped
Heat grill. Zest and halve lemons. In a bowl, combine zest, parsley, 5 tbs oil, thyme, garlic, and red pepper. Add chicken, season, grill until cooked through. DRIZZLE cut sides of lemons with oil. Grill, cut side down, until charred. Squeeze juice from 1 lemon over chicken, slice chicken. IN a bowl, toss kale, garbanzo beans, cheese, bell peppers, onion, and celery with juice from remaining lemon and 3 tbs oil, season. SERVE chicken with salad & ENJOY...
