SWEET-POTATO SHEPHERD'S PIE
MAKES 4 SERVINGS.
2 pounds sweet potatoes, cut into thirds
2 tbs butter
2 tsp paprika
1 tsp cumin
1 pound ground pork
1/4 cup broth
1 cup chopped onion
2 cups corn
In a pot of salted water, bring potatoes to a boil. Cook until tender, drain. Remove and discard skin, transfer potatoes to a bowl. Mash with butter, season. *Heat oven to 350 degrees. In a skillet, toast paprika and cumin. Add pork, cook until cooked through. Stir in broth, cook 2 min. Transfer pork mixture to a bowl, season. Discard all but 2 tbs of liquid. *In same skillet, cook onion until softened. Add corn, cook until tender. Return pork mixture to skillet, mix well, season. *Spoon and spread potatoes over pork mixture. Bake 15 min. then broil until top is browned. SERVE & ENJOY...
