[SimplifyMe] Peach {Cake} Upside Down

 

PEACH CAKE UPSIDE DOWN
MAKES 6 SERVINGS.

1 3/4 cups sugar
4 peaches, cut into wedges
2 tbs bourbon
1 1/2 cups flour
1/4 cup ground pecans
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 stick unsalted butter
2 eggs
1 tsp vanilla
1 cup buttermilk

Heat oven to 375 degrees. Combine 3/4 cup sugar and 1 1/2 tbs water in a skillet until mixture looks like wet sand. Cook until light amber. Remove from heat, arrange peaches in concentric circles over caramel. Drizzle with bourbon, set skillet aside. *Whisk flour, pecans, baking powder, baking soda, and salt in a bowl. Beat butter and remaining sugar in a bowl until fluffy. Add eggs, beat well. Then beat in vanilla. Add flour mixture, alternating with buttermilk, mix until incorporated. Pour batter over peaches. *Transfer skillet to oven, bake until cake is golden and done 50 min. Let sit 15 min. then invert onto a platter. SERVE & ENJOY...
