CUTE FRUIT-BASKET CAKE---Cake that looks like half a watermelon filled with fruit, very cute. No picture, sorry.
MAKES 8 SERVINGS.
2 boxes white cake mix
Red, yellow, and green food coloring
1/4 cup chocolate chips
Two 16 oz tubs vanilla frosting
Juice of 1 lemon
Assorted Fresh fruit, any kinds
Heat oven to 300 degrees. Coat a 4 quart bowl with cooking spray. Prepare cake mixes as directed, fold in 2 tsp red food coloring and chocolate chips. Transfer batter to bowl, bake until done 1 hour 30 min. Let cool slightly, then invert onto a rack. *Put cake flat side down on a cardboard circle. Trim 2 opposite sides to make an oval shape. Cover sides of cake with a thick layer of frosting, cover top with a thin layer, this will be the bottom of cake. Reserve 1/2 cup frosting for inside of cake. Freeze until frosting is firm. *Pat sides of cake with a paper towel to even out any bumps in frosting. Mix 1/2 tsp yellow food coloring with a drop of green food coloring and a splash of lemon juice in a bowl. Paint yellow green food coloring all over side of cake. *Mix 1/2 tsp green food coloring with a splash of lemon juice in another bowl. Paint green strips on cake, then blend edges of stripes. Put another cardboard circle on cake, flip it over. Carve out center of cake 1" deep, leaving a 1" border. Cover center with frosting, leaving border unfrosted. Freeze cake 20 min. Make zigzag cuts around rim of cake. Mound fruit in center, covering frosting. SERVE & ENJOY...
