CRAB DEVILED-EGGS ON POTATOES
MAKES 10.
5 eggs
3 tbs mayonnaise
1 tsp mustard
1/4 tsp Old Bay
3 tbs corn
2 tsp chopped chives
4 small potatoes
Oil
3 tbs crabmeat
Put eggs in a pan, cover with water. Bring to a boil, remove from heat, let stand 10 min. Remove eggs, transfer to a bowl of ice water. Peel eggs, halve lengthwise, scoop out yolks into a bowl. *Add mayo, mustard, and Old Bay to yolks, whisk until smooth. Stir in corn and chives, season. Transfer mixture to a pastry bag fitted with a large star tip. Pipe into egg white halves. Refrigerate. *Slice potatoes into 10 rounds. Heat oil in a skillet. Fry potatoes until golden. Drain on paper towels, season. Place a deviled egg on each potato round. Top with crabmeat, chives and Old Bay. SERVE & ENJOY...
