BRAISED BABY-ARTICHOKES
MAKES 6 SERVINGS.
3 lemons
24 baby artichokes
Oil
6 cloves garlic, chopped
3 anchovy fillets, optional
Pinch red pepper flakes
1 cup white wine or broth
1 bunch thyme, tied
1/2 cup chopped parsley
Parmesan cheese
Fill a bowl with water. Halve 1 lemon, squeeze juice into water, drop both halves into bowl. Cut off top quarter of artichokes. Peel tough dark green skin from stems. Remove tough outer leaves. Cut artichokes in half lengthwise, toss into lemon water. *Zest and juice remaining lemons, reserve. Coat a skillet with oil. Add garlic, anchovies, and pepper flakes. Cook until anchovies have dissolved. Remove artichokes from water, add them to pan along with zest and juice, wine and thyme. Season, add enough water to cover artichokes. Bring to a boil, then simmer until artichokes are soft. *Remove thyme, toss in parsley, stir to combine. Put artichokes on a platter. Shave Parmesan on top. SERVE & ENJOY...
