THAI VEGGIE SHRIMP-SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 pound peeled deveined shrimp
1 shallot, sliced
4 green onions, sliced
2 tbs chopped mint
2 tbs lime juice
2 tsp fish sauce
1/2 tsp crushed red pepper flakes
6 cups shredded green cabbage
1 carrot, shredded
Bring a pot of salted water to a boil. Cook shrimp until done. Drain. Combine shallot, green onions, mint, lime juice, fish sauce, and red pepper in a bowl. Remove 2 tbs to a bowl. Combine cabbage and carrot in bowl, toss with dressing. Add shrimp to bowl with 2 tbs dressing, toss. Arrange cabbage mixture on each of 4 plates. Top with shrimp. SERVE immediately & ENJOY...
