PEPPER LIME-ZEST CORN
MAKES 5 SERVINGS.
5 ears of corn
1 tbs crushed red pepper flakes
Grated zest of 2 limes
1/2 cup grated Parmesan cheese
Salt and Pepper
Melted butter
Heat a grill. Peel back corn husks but leave them on. Remove silk. Combine pepper flakes, zest and cheese in a bowl, season. Place corn on grill, cook until lightly charred. Brush with butter, sprinkle with cheese mixture. SERVE & ENJOY...
