NO-COOK VEGGIE BEEF-WRAPS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/3 cup balsamic vinaigrette
1/2 cup basil leaves
1 clove garlic, minced
1 lemon, zested, juiced
4 burrito wraps
1/2 pound sliced roast beef
16 slices cheese
3 tomatoes
1/4 cup sliced onions
1 cup spinach
In bowl, combine vinaigrette, 2 tbs minced basil, garlic, 2 tsp lemon juice, and 1/2 tsp lemon zest. Brush wraps with vinaigrette mixture. Layer wraps with beef, cheese, tomatoes, onions, spinach, and remaining basil. Season. Roll up wraps. Slice diagonally. SERVE & ENJOY...
