[SimplifyMe] Peach Mustard {Pork-Chops}

 

PEACH MUSTARD PORK-CHOPS
MAKES 6 SERVINGS.

FOR PORK---
1 tbs brown sugar
1 tbs paprika
1 tsp coriander
1 tsp onion powder
1 tsp garlic powder
1 tsp mustard powder
Salt and Pepper
6 bone in pork chops
FOR PEACH MUSTARD SAUCE---
1 1/2  cups apple cider vinegar
1 cup plus 2 tbs peach preserves
6 cloves garlic, smashed
2 tbs Worcestershire
4 tsp mustard powder
3/4 tsp red pepper flakes
Salt
Oil
3 peaches, halved, pitted

PREPARE PORK---Combine brown sugar, paprika, coriander, onion powder, garlic powder, mustard, salt and pepper in a baking dish. Pierce both sides of pork. Add chops to dish, turning to coat with spice rub, refrigerate 4 hours. MAKE SAUCE---Combine vinegar, preserves, garlic, Worcestershire, mustard, pepper flakes and salt in a pan. Bring to a boil, simmer until sauce thickens slightly. Let cool. Transfer 1/4 cup of sauce to a bowl for basting. Set aside remaining sauce for serving. REMOVE pork from refrigerator. Heat a grill. Brush grates with oil. Transfer chops to grill, cook until lightly marked. Flip chops, continue cooking, flipping and basting chops until they are golden and marked. Transfer to a cutting board, let rest 5 min. Brush peaches with oil, place cut side down on grill, grill until marked. SERVE pork chops with grilled peaches and sauce & ENJOY...
