VEGGIE PASTA SALAD
MAKES 8 SERVINGS.
Salt and Pepper
Vinaigrette of your choice
1 onion, chopped
2 cloves garlic, minced
3 cups cherry tomatoes, halved
1/2 cup pitted, chopped olives
1 pound short pasta
1/2 cup torn basil
1 pound mozzarella balls, quartered
2 tbs grated Parmesan cheese
Bring a pot of salted water to a boil. Mix vinaigrette in a bowl. Whisk in onion, garlic, tomatoes and olives. Set aside to marinate 10 min. *Cook pasta in boiling water until al dente. Drain pasta, add to bowl with tomato mixture. Toss. *Add basil, mozzarella and Parmesan to bowl with pasta mixture. Season salad with salt and pepper, serve right away or refrigerate to SERVE cold & ENJOY...
