TOMATO CHEESE FRENCH TOAST
MAKES 1 SERVING.
3 slices Italian bread
1 egg
1/4 cup milk
3 slices mozzarella
2 tbs sliced oil packed sun dried tomatoes, drained
1 tbs sliced basil
In a baking dish, arrange bread. In a bowl, whisk egg, milk, and a pinch salt. Pour over bread, refrigerate overnight. In the morning, coat a skillet with cooking spray, heat. Add bread, cook until browned on the bottom. Flip, top each piece with a slice of cheese, cook until cheese melts. Top with tomatoes and basil. SERVE & ENJOY...
