THREE MILK CAKE---Cake made with 3 types of milks.
MAKES 8 SERVINGS.
CAKE---
1 1/2 cups flour
2 tsp baking powder
5 eggs, separated
3/4 cup plus 2 tbs sugar
1 tsp vanilla
SOAKING LIQUID---
13.5 oz can coconut milk
14 oz can sweetened condensed milk
1/2 cup milk
FROSTING---
1 cup heavy cream
2 tbs sugar
Heat oven to 350 degrees. Coat a 13x9x2" baking pan with cooking spray. Line bottom of pan with wax paper, coat paper. CAKE---In a bowl, whisk together flour and baking powder. In a bowl, beat egg whites until soft peaks form. Add 1/4 cup sugar, beat until stiff peaks form. In a separate bowl, beat yolks with remaining sugar and vanilla until thick. Fold in whites, then flour mixture. Pour batter into pan. Bake 27 min. or until done. Invert cake, cool. SOAKING LIQUID---In a bowl, whisk together all milks. Remove wax paper from cake. Poke holes all over cake. Return cake to pan, upside down. Pour half of soaking liquid over top. Repeat, refrigerate overnight. FROSTING---Whip cream and sugar until medium stiff peaks form. Spread over cake. SERVE & ENJOY...
