OLIVE-RELISH WITH FISH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/4 cup pitted olives, chopped
2 roasted red bell peppers, chopped
2 tbs chopped basil
3 tsp oil
2 tsp red wine vinegar
4 skin on fish steaks
Juice of 1 lemon
In bowl, combine olives, peppers, basil, 1 tsp oil, vinegar, and pepper. Grease grill grate with cooking spray. Heat grill. Season fish with salt and pepper, drizzle with remaining oil. Grill fish until center is warmed and opaque. Transfer fish to plates sprinkle with lemon juice. SERVE WITH OLIVE PEPPER RELISH & ENJOY...
