NUTTY CHICKEN SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/4 cup seasoned rice vinegar
2 1/2 tbs lime juice
3 tbs orange juice
1 1/2 tbs toasted sesame oil
1 tbs canola oil
1 tbs light soy sauce
1/2 tsp crushed red pepper
4 cups sliced green cabbage
1 cup sliced red cabbage
1 cup shredded carrots
1 mango, peeled, pitted, sliced
1/2 cup chopped green onions
Salt and Pepper
12 oz chopped cooked skinless chicken
1/2 cup cashews, toasted
In a bowl, whisk together vinegar, juices, oils, soy sauce and red pepper. Add cabbages, carrots, mango and green onions. Toss until coated. Season with salt and pepper. *Divide vegetable mixture among 4 plates. Top with chicken and cashews. SERVE & ENJOY...
