CHICKEN STUFFED PITAS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 pound boneless skinless chicken breasts, cut into chunks
3 tbs oil
1/2 tsp coriander
1/2 tsp oregano
Salt and Pepper
1 pint cherry tomatoes
2 cloves garlic, chopped
3 tbs lemon juice
1/2 head lettuce, shredded
4 green onions, sliced
1/2 cup dill, chopped
4 pieces pita bread
Yogurt
8 skewers
Heat grill. In a bowl, toss chicken with 1 tbs oil, coriander, oregano, salt and pepper. Thread onto skewers. Place tomatoes and garlic on a piece of foil. Drizzle with 1 tbs oil, sprinkle with salt and pepper. Fold, seal foil to form a pouch. *Place pouch and skewers on grill, cook until chicken is cooked through. Just before removing from grill, brush chicken with 1 tbs lemon juice. In a bowl, toss lettuce, green onions, dill, juice, oil, salt and pepper. Grill pita bread until warm. Spread pita with yogurt, stuff with chicken, tomatoes and salad. SERVE & ENJOY...
