BERRY-RHUBARB CRUMB BARS
MAKES 16 BARS.
1 3/4 cups flour
3/4 cup brown sugar
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter
1/2 cup sliced almonds
2 cups sliced rhubarb
2 cups berries
3/4 cup sugar
2 tbs cornstarch
2 tbs orange juice
2 tsp vanilla
Heat oven to 350 degrees. Line 8" square baking pan with parchment, leaving overhang. Mix flour, brown sugar, baking soda and salt in a bowl. Add butter, mix into coarse crumbs. Press two thirds of mixture onto bottom of pan. Bake 15 min. or until golden, cool slightly. *Mix remaining crumb mixture with almonds. In bowl, combine rhubarb, berries, sugar, cornstarch, juice and vanilla, spread over crust. Sprinkle with crumb topping. *Bake 45 min. or until bubbling. Cool in pan. Lift out bars. CUT INTO 16 PIECES, SERVE & ENJOY...
