POTATO SCALLION HUSH-PUPPIES
MAKES 24.
3 cups oil
1 cup chopped scallions
1 egg
1 cup corn muffin mix
1/2 cup grated sweet potato
Hot sauce
In pot, heat oil. In bowl, whisk scallions and egg. Stir muffin mix and potato into scallion mixture. Fry heaping teaspoonfuls of batter until golden. Drain, season. SERVE with hot sauce & ENJOY...
