CHOCOLATE CAKE WITH BERRIES
MAKES 8 SERVINGS.
1/2 cup each water and unsweetened cocoa powder
3/4 cup sugar
2 tbs instant coffee powder
3 oz bittersweet chocolate, chopped
2 egg yolks
1 tsp vanilla
1/3 cup flour
1/4 tsp baking powder
5 egg whites
1/2 of an 8 oz container whipped topping
1 1/2 cups raspberries, blackberries and/or blueberries
Heat oven to 350 degrees. Coat a springform pan with cooking spray, set aside. In a pan, stir together sugar, water and coffee powder. Cook until sugar dissolves and mixture almost boils. Stir in chocolate until melted. Remove from heat. Place egg yolks in a bowl. Stir chocolate mixture into egg yolks, stir in vanilla. Set aside. *In a bowl, stir together cocoa powder, flour and baking powder. Stir in chocolate egg yolk mixture until smooth. In a bowl, beat egg whites until stiff peaks form. Stir a small amount of beaten egg whites into chocolate mixture. Fold chocolate mixture into remaining egg whites. Spread in pan. *Bake 30 min. or until done. Cool in pan 10 min. Remove side of pan. Cool. *To serve, cut cake into wedges. Sprinkle plates with cocoa powder. Transfer cake wedges to plates. Top with whipped topping and berries. SERVE & ENJOY...
