STAINED GLASS COOKIES
MAKES 24 COOKIES
20 hard candies, different colors
1 egg
2 sticks unsalted butter
1 tsp baking powder
1 tsp vanilla
3/4 cup sugar
1/4 tsp salt
2 1/2 cups cake flour
SIFT flour, baking powder and salt into a bowl. Beat butter and sugar in a bowl until fluffy. Beat in egg and vanilla. Add flour mixture, beat until incorporated. Divide dough in half, wrap in plastic wrap, refrigerate until firm. Separate candy by color, place each color in a separate plastic bag. Crush into small pieces. LINE 2 baking sheets with parchment. Working with 1 piece of dough at a time, dust dough with flour, roll out between 2 pieces of parchment until 1/8" thick. Refrigerate until slightly firm. Cut into shapes using 2" cookie cutters, transfer to baking sheets. Gather scraps, reroll to cut out more cookies. Cut out shapes from centers of cookies using smaller cutters, fill cut out areas two thirds full with crushed candy. Refrigerate until firm. HEAT oven to 350 degrees. Bake cookies until candy melts and cookies are golden 15 min. Let cool 5 min. on baking sheets, then transfer to racks to cool, then SERVE...
