[SimplifyMe] SlowCooker Mexican {Stew}

 

SLOWCOOKER MEXICAN STEW
MAKES 8 SERVINGS.

1 cup flour
1/4 tsp salt
1/8 tsp pepper
1 pound beef stew meat, cut into cubes
2 tbs canola oil
16 oz can kidney beans, drained
15.25 oz can whole kernel corn, drained
2 potatoes, cubed
2 carrots, sliced
2 celery ribs, sliced
1 onion, chopped
2 cans 15 oz each tomato sauce
1 cup water
1 envelope taco seasoning
1/2 tsp cumin
Tortilla chips
Shredded cheddar cheese

Combine flour, salt and pepper in a plastic bag. Add beef, shake to coat. Brown meat in oil in a skillet, drain. Transfer to a slow cooker. Add beans and next 5 ingredients. Whisk tomato sauce, water, taco seasoning and cumin, pour over top. Cook on low 8 hours or until meat is tender. SERVE with tortilla chips and cheese...
