GRANOLA PLUM CREPES---Made into a cake. Enjoy!
MAKES 6 SERVINGS.
3/4 cup granola
2 1/2 cups lowfat milk
1 1/2 cups flour
6 tbs unsalted butter, melted
1 cup whipped cream cheese
1/2 cup plum jam
1/4 cup heavy cream
2 tbs sugar or Splenda
2 plums, chopped
Combine granola and 1 cup milk in a blender, puree until almost smooth. Add remaining milk, flour and butter, blend until smooth. Transfer to a bowl, set aside 1 hour. Heat a skillet, brush with butter. Add 1/4 cup batter, swirl to coat bottom of pan. Cook crepe until golden on bottom, flip and cook until golden on other side. Transfer to parchment lined baking sheet. Repeat with remaining batter. ASSEMBLE CAKE---Set aside 1/4 cup cream cheese for topping. Lay a crepe on a plate, spread with some of the remaining cream cheese. Sprinkle with some of the granola. Top with another crepe, spread with some of the jam. Repeat with remaining crepes, alternating layers of cream cheese-granola and jam and ending with a crepe. Combine reserved cream cheese and 1 tbs sugar in a bowl, whisk until smooth and slightly thickened. Toss plums with remaining sugar in a microwave bowl, microwave 2 min. Top crepe cake with cream mixture and plums, sprinkle with granola. Cut into wedges, then SERVE...
