[SimplifyMe] Easy Gingerbread {Cookies}

 

EASY GINGERBREAD COOKIES
MAKES 30 COOKIES.

1/4 tsp each allspice, salt and pepper
1/3 cup each molasses and sugar
1 cup powdered sugar
3/4 tsp cinnamon
2 1/2 cups flour
2 sticks unsalted butter
1/2 tsp baking soda
1 tsp ground ginger

Whisk flour, ginger, cinnamon, baking soda, allspice, salt and pepper in a bowl. Beat butter, molasses and sugar in a bowl until fluffy. Add flour mixture, beat until incorporated. Divide dough in half, wrap in plastic wrap, refrigerate 30 min. Heat oven to 375 degrees. Roll out dough on a floured surface until 1/8" thick. Cut out shapes using 3" cookie cutters, arrange on 2 ungreased baking sheets. Gather scraps, reroll to cut out more cookies. Refrigerate cutouts 10 min. Bake cookies until edges are browned 15 min. Let cool 2 min. on baking sheets, then transfer to racks to cool. MAKE ICING---Whisk powdered sugar with 1 tbs boiling water in a bowl, add 1 tsp water if icing is too thick. Transfer to a plastic bag, snip off a corner, pipe icing onto cookies. Let set 30 min. then SERVE...
