[SimplifyMe] Baked Eggplant (Pasta)

 

BAKED EGGPLANT PASTA
MAKES 4 SERVINGS.

1/4 cup grated Parmesan cheese
24 oz jar marinara sauce
Salt and Pepper
1 eggplant, cut into 12 slices
3/4 pound shredded mozzarella cheese
4 cloves garlic, chopped
1/4 cup olive oil
3/4 pound ziti pasta

Heat oven to 400 degrees. In a pot of boiling salted water, cook pasta until al dente, drain. On a foil lined baking sheet, rub eggplant with 3 tbs oil, season with salt and pepper. Broil until browned. In a saucepan, heat remaining oil. Add garlic, cook 3 min. Add marinara. Spread one quarter of the sauce on bottom of an casserole dish. Layer with half of the pasta. Top with one third each of the mozzarella and Parmesan, repeat layering. Layer on eggplant. Dollop remaining sauce on top, sprinkle with remaining mozzarella and Parmesan. Bake until cheese is browned and sauce is bubbling 30 min. then SERVE...
