CHICKEN SALSA TACOS
MAKES 4 SERVINGS.
4 green onions, sliced
1/2 cup sour cream
1 tbs chili powder
1/4 cup chopped cilantro
2 tomatoes, cored, chopped
1 cup sharp shredded cheddar cheese
8 corn taco shells, warmed
Salt
1/4 cup lime juice
15.5 oz can kidney beans, drained
2 cups shredded cooked chicken
In a bowl, toss together chicken, tomatoes, beans, cilantro, lime juice, chili powder and 1 tsp salt. Fill taco shells with chicken mixture. Top each with sour cream, then sprinkle with cheddar and green onions, then SERVE...
