PINEAPPLE SHRIMP TACOS
MAKES 8 TACOS.
Cook 1 pound peeled deveined shrimp in 2 tsp oil in a skillet until pink, remove from pan. Saute 2 sliced bell peppers and 1 sliced onion in 1 tsp oil. Add 1 envelope fajita seasoning mix and 1/2 cup water. Bring to a boil, cook 2 min. Return shrimp to skillet. Top 8 warm corn tortillas with shrimp mixture, 1 cup pineapple tidbits and 1/2 cup shredded Cotija cheese. Wrap 8 lettuce leaves around tortillas to SERVE...
