MEXICAN MACARONI CASSEROLE
MAKES 8 SERVINGS.
1/2 cup crushed tortilla chips
15.25 oz can corn, drained
16 oz can kidney beans, drained
2 1/2 cups shredded Mexican cheese blend
4 oz can chopped green chilies
2 garlic cloves, minced
14.5 oz can diced tomatoes
1 1/2 pounds ground beef
7.75 oz can Mexican tomato sauce
1 envelope taco seasoning
1 onion, finely chopped
7.25 oz pkg macaroni and cheese mix
PREPARE macaroni and cheese mix according to package directions. Cook beef, onion and garlic in a pot until meat is no longer pink, drain. Add tomatoes, chilies and taco seasoning. Stir in 2 cups cheese, beans, corn, tomato sauce, macaroni and cheese. Transfer to a greased baking dish, sprinkle with chips and remaining cheese. Bake uncovered at 350 degrees for 35 min. or until bubbly, then SERVE...
