GLUTEN-FREE CHOCOLATE TORTE---A chocolate torte dusted with cocoa powder.
MAKES 8 SERVINGS.
12 oz bittersweet chocolate, chopped
Unsweetened cocoa powder
Pinch of salt
6 eggs
1 1/2 sticks unsalted butter, cut into small pieces
1/2 cup sugar
Heat oven to 350 degrees. Butter bottom and side of a 9" springform pan. Combine chocolate and butter in a bowl. Place bowl over a saucepan of simmering water, stir until melted. Remove bowl from saucepan, let cool slightly. Combine eggs, sugar and salt in a bowl. Beat until thick. Fold half of melted chocolate mixture into egg mixture until combined, then fold in rest. Pour batter into pan, bake until done 45 min. Let cool completely in pan, transfer to a platter. Dust with cocoa powder, then SERVE...
