CHEESY CHICKEN PASTA
MAKES 6 SERVINGS.
16 oz box rigatoni pasta
1 cup grape tomatoes, halved
1/2 cup pitted olives, halved
1/8 tsp salt
1 tbs lemon juice plus 1 tsp grated lemon zest
2/3 cup feta cheese cubes packed in oil, drained, oil reserved
1/4 tsp pepper
1 tsp oregano, chopped
1 pound boneless skinless chicken breasts, cut into pieces
BRING a pot of salted water to a boil. Add rigatoni, cook per package directions. Drain, reserving 1/2 cup pasta water. Toss chicken with 2 tbs oil from feta. Heat a skillet. Add chicken, cook until no longer pink. Stir in tomatoes, olives and oregano, heat through. Remove from heat, toss with rigatoni, cheese, 1/4 cup pasta water, lemon juice and zest, pepper and salt, then SERVE...
