GLAZED PORK CHOP FOR ONE
Makes 1 serving.
2 tsp each balsamic vinegar and water
1 tsp each olive oil and brown sugar
1/2 tsp cornstarch
Salt and Black pepper
1 tbs dried cherries, halved
1/2 cup chicken broth
Boneless pork chop
HEAT oil in a skillet. Season pork chop on both sides with salt and pepper, sear on both sides until cooked through. Remove from skillet. Combine broth, vinegar, brown sugar and cherries. Add to pan. Simmer 1 min. Combine cornstarch and water. Add to cherry mixture, cook until thickened. Add back the pork chop and any juices. Simmer 1 min. then SERVE...
