COFFEE MERINGUES FOR CHRISTMAS
Makes 4 dozen.

2 oz bittersweet chocolate, coarsely chopped
1/8 tsp cream of tartar
1/8 cup sugar or Splenda
1 egg white
1/2 tbs instant espresso powder

Heat oven to 200 degrees. Line baking sheets with parchment paper. In a bowl, whisk together sugar, espresso powder and cream of tartar, whisk in egg white. Set bowl over a saucepan of simmering water, cook until sugar is dissolved and egg white is very warm. Remove from heat, beat until soft glossy peaks form. Spoon egg white mixture into a pastry bag fitted with a 3/4" star tip. Pipe stars onto baking sheets, bake until meringues are set on the outside 30 min. Slide sheets of parchment paper onto wire racks, let meringues cool completely. Melt chocolate in microwave according to package directions. Dip tops of meringues into melted chocolate, then transfer to parchment to let set, then SERVE...
