| LOW FAT CARNITAS TACOS Makes 8 servings. 1/4 cup chopped cilantro or parsley 1/4 tsp each cinnamon and cayenne pepper 1/2 tsp pepper 1/2 tsp salt 1 tsp cumin 1 1/2 tsp dried oregano 3 tbs tomato paste 28 oz can diced tomatoes Two 15.5 oz cans cannellini beans, drained, rinsed 1 chipotle chile in adobo, chopped, + 2 tbs adobo sauce 3 cloves garlic, minced 3 carrots, diced 1 onion, diced 2 pounds boneless pork loin Trim excess fat from pork and cut roast in half crosswise. Combine remaining ingredients except cilantro in a slow cooker and add pork, cover and cook 5 hours on high or 8 hours on low. Shred pork and stir in cilantro.
